Steps

    We wash the olives thoroughly several times.

    We score the olives with a knife.

    We soak the olives in water for 3 to 7 days, changing the water twice a day.

    We drain the olives.

    We add two tablespoons of coarse salt (iodine-free), a quarter cup of olive oil, half a cup of lemon juice, and one teaspoon of ground turmeric.

    We add the diced lemon and hot green pepper.

    We add the brine solution (10 cups of water + 10-12 tablespoons of coarse salt).
