Ingredients

- 1CupWhole wheat flour
- 2Tablespoons (tbsp)Roasted sesame
- 2Grams (g) Instant yeast
- 1CupSugar
- 2CupWarm water
- 0.25CupWarm milk
- 1CupOlive oil
- 1PinchSalt
- 2PinchBlack Seeds
- 2PinchThyme
- 3Tablespoons (tbsp)Sumac
- 1Psc.Onion
- 1To TasteBlack pepper

Note: We may need to add more water during kneading depending on the type of flour.

In a large bowl, mix the white flour, whole wheat flour, yeast, sugar, sesame seeds, and black seeds

Gradually add warm water and warm milk while kneading until a soft dough forms

Add salt and half a cup of olive oil

knead very well for at least 10 minutes until the dough becomes smooth and elastic

Cover the dough and leave it to rise at room temperature until it doubles in size.

Divide the dough into medium-sized balls, place them on a greased tray, brush the tops with olive oil, and let them rest again.

Chop the onion, then add salt, black pepper, olive oil and rub it well

To prepare the filling, mix the thyme, sumac and onion well, then adjust the amount of salt

Add a quarter cup of olive oil and mix well until the ingredients are homogeneous.

Roll each dough ball into a very thin rectangle. Spread some filling in the center

Fold the dough over it to form a small square, adding a little filling between each fold.

Let it rest for a quarter of an hour, then roll it out slightly on a lightly oiled surface.

Bake in a preheated oven at the highest temperature until golden.

Immediately after baking, brush the flatbread with more olive oil for flavor and shine.
