Chicken Avocado Salad
Ingredients
- 1Kilograms (kg)Chicken Breast
- 1PinchSalt
- 1To TasteBlack pepper
- 1Teaspoons (tsp)Crushed red pepper
- 1CupOlive oil
- 1SlicesLettuce
- 0.5CupCherry tomato
- 1Psc.Onion
- 1Psc.Avocado
- 1Psc.lemon
- 1Tablespoons (tbsp)Light Mayonnaise
- 1Tablespoons (tbsp)Vegetable oil

Heat the vegetable oil in a pan.

Add the chicken pieces to the pan.

Season with salt and black pepper (you can also add red pepper if desired).

Cook the chicken until golden and fully cooked, then remove from heat and set aside.

Place the chopped lettuce in a large serving bowl.

Add the chopped onion and halved cherry tomatoes.

Cut the avocado in half, using one half for the dressing and the other for topping.

Slice the avocado half into thin slices and set aside for garnish.

Add the cooked chicken to the salad bowl.

To prepare the dressing, mash the remaining half of the avocado in a small bowl.

Add a pinch of salt and pepper, the light mayonnaise, olive oil, and lemon juice (if using).

Mix the dressing until smooth and creamy.

Pour the dressing over the salad.

Toss the salad gently to coat all ingredients.
