    How to Prepare the Syrup: We mix two cups of sugar with three cups of water in a pot over medium heat. We let the mixture boil for seven minutes, then add a squeeze of lemon. We continue to boil the syrup for a few more minutes until it thickens slightly, then we let it cool.

    We mix four cups of coarse semolina with one tablespoon of baking powder, a pinch of salt, and two tablespoons of sugar in a large bowl. We add four tablespoons of shredded coconut and two tablespoons of local ghee to the dry ingredients and mix well. After that, we add three tablespoons of yogurt and one teaspoon of yellow food coloring and mix the ingredients again.

    We start by gradually adding a quantity of warm water until we achieve a suitable consistency, then we knead until the dough is homogeneous. We let the dough rest for fifteen minutes, then we grease the bottom of the tray with yogurt. After that, we spread the dough in the tray and add yogurt on top.

    We place the tray in the oven on the middle rack at a temperature ranging from 230 to 250 degrees Celsius for half an hour. After that, we take the tray out and cut the harissa, then we put it back in to brown. Upon removing it, we pour the cold syrup over it and garnish it with shredded coconut.
