Ingredients

- 0.25CupOlive oil
- 1PinchSalt
- 1Teaspoons (tsp)Cumin
- 1Teaspoons (tsp)Paprika
- 5Psc.lemon
- 1BunchGreen Coriander
- 3ClovesMinced garlic
- 2Tablespoons (tbsp)Pepper paste

Cut the cauliflower head into small pieces

Place the cauliflower pieces on a baking tray.

Sprinkle salt, paprika, and cumin over the cauliflower.

Add olive oil and mix well until all the pieces are coated with the spices and oil.

Place the tray in a preheated oven at 180°C (350°F) for 30 minutes or until golden brown.

While the cauliflower is baking, squeeze the juice of five lemons and chop a bunch of fresh cilantro.

Heat a little olive oil in a pan over medium heat.

Add the minced garlic to the hot oil and sauté until fragrant.

Add half of the chopped cilantro and two tablespoons of red pepper paste

Pour in the lemon juice and let the mixture simmer briefly.

Remove the roasted cauliflower from the oven once it’s cooked and golden.

Pour the prepared sauce over the cauliflower.

Add the remaining chopped cilantro.

Toss everything together until the cauliflower is well coated with the sauce.

Serve the dish hot, garnished with lemon slices or fresh cilantro leaves.
