Place the chicken in a bowl with the pearl onions, thyme, and unsweetened hibiscus water, and mix the ingredients well.

Coat the chicken with flour and brown it in a skillet on all sides until golden, then set it aside.

In the same skillet, sauté the mushrooms until they turn golden

Add the diced onions and celery to the skillet and stir for 5 minutes

Add the pearl onions and diced carrots, then stir well.

Pour the hibiscus water used for soaking the chicken into the skillet and mix.

Dissolve two tablespoons of demi-glace sauce in a little water, then add it to the skillet and stir the ingredients.

Return the chicken to the skillet, season with salt, pepper, and one tablespoon of tomato paste, cover, and let it simmer for a while.

Transfer the mixture to a baking dish, cover it with parchment paper, then aluminum foil, and place it in a preheated oven at 200°C (392°F) for one hour until the ingredients are fully cooked.
