We heat the oil in a pot over medium heat, then add the chopped onion and sauté until it softens and turns light golden.

We add the minced garlic and stir it with the onion until lightly golden.

We add 1 cup of water to the onion and garlic to prevent them from burning or darkening.

We add the chopped tomatoes, cover the pot, and let them soften for about 10 minutes.

Once the tomatoes are soft, we remove the skin using a fork or tongs.

In another pot, we boil salted water (1 tablespoon salt) to cook the pasta.

We boil the pasta in boiling water, but we turn off the heat 2 minutes before the time written on the package, because the pasta will finish cooking later with the sauce.

After draining, we mix the pasta with the sauce in the pan or pot and stir well until fully coated.

بعد تصفية المعكرونة، نخلطها مع الصلصة في المقلاة أو القدر، ونقلب جيدًا حتى تتوزع الصلصة بالتساوي.

We serve the pasta hot. Optionally, garnish with grated cheese or fresh basil.

Wash, clean, and peel the shrimp (½ kg), then mix it with the egg (1) and the spices (1 tsp sweet paprika, 1 tsp garlic powder, salt, and pepper).

نغسل وننظف ونقشر الربيان (نصف كيلو ربيان)، ثم نخلطه مع البيضة (واحدة) والبهارات (ملعقة صغيرة بابريكا حلوة، ملعقة صغيرة بودرة ثوم، ملح وفلفل).

Coat the shrimp with breadcrumbs (panko).

نغطي الربيان بفتات الخبز (بانكو).

Fry the shrimp in hot oil for 3-4 minutes until cooked and golden.

نقلي الربيان في زيت حار لمدة ثلاث إلى أربع دقائق حتى يستوي ويحمر

Dice the mango (1) and tomato (1) into small cubes, then add mint leaves (to taste), cilantro leaves (to taste), juice of 1 lemon, and salt. Mix well to make the mango salsa.

Warm the small-sized tortilla bread and arrange the mango salsa, shrimp, a squeeze of lemon, and mayonnaise or any preferred sauce.

نسخن خبز التورتيا (بحجم صغير)، ثم نرتب عليه صلصة المانجو والربيان، ونضيف عصرة ليمون ومايونيز أو أي صوص مفضل

اخلطي الطحين، السكر، الملح، الخميرة، البيض، والحليب الدافئ. اعجني حتى تتماسك المكونات.

In a bowl, mix the flour, sugar, salt, and yeast. Add the eggs and warm milk. Knead the dough until smooth. Add the softened butter in stages and knead again.

في وعاء، اخلطي الطحين والسكر والملح والخميرة. أضيفي البيض والحليب الدافئ واعجني العجينة حتى تصبح ناعمة. أضيفي الزبدة اللينة على مراحل واعجني مرة أخرى.

Let the dough rest in a warm place for about 1 hour.

دعي العجينة ترتاح في مكان دافئ لمدة ساعة تقريبًا.

Roll out the dough and cut into a croissant shape. Let it rest for another 10 minutes.

افردي العجينة وقطعيها على شكل كرواسون. اتركيها ترتاح لمدة 10 دقائق أخرى.

Preheat your waffle maker. Place the dough inside and cook for 3-5 minutes until golden.

سخني جهاز الوافل وضعي العجينة داخله واطهيها لمدة 3-5 دقائق حتى تصبح ذهبية.

Drizzle with your preferred sauce and enjoy

Place the yeast, sugar and lukewarm water in the bowl of a stand mixer and stir until the yeast is completely dissolved.

نقوم بوضع الخميرة والسكر والماء الفاتر في وعاء العجان ونقلب المكونات حتى تذوب الخميرة تماماً.

We leave the mixture until the yeast reacts and bubbles appear

Add the flour, salt, and baking powder to the yeast mixture and start kneading until the dough forms.

Add the oil and knead the dough for 8 minutes until it is smooth and soft

Cover the dough and leave it in a warm place to rise for about an hour until it doubles in size.

نقوم بتغطية العجينة ونتركها في مكان دافئ لتختمر لمدة ساعة تقريباً حتى يتضاعف حجمها.

Put olive oil in a skillet on the fire and then put the sliced onions

نضع زيت الزيتون في مقلاة على النار ثم نضع البصل المقطع

Add sumac and stir until the onions reach the color shown in the video

نضيف السماق ثم نقلب حتى يصل البصل إلي اللون الموضح بالفيديو

نقوم بفرم الزعتر الأخضر قليلًا

Mix the green thyme with the fried onions and sumac, then add salt to taste.

نقوم بخلط الزعتر الأخضر مع البصل المقلي والسماق، ثم نضيف الملح حسب الرغبة.

After the dough has risen, cut it into medium-sized balls, and roll each ball out on an oiled surface.

بعد تخمير العجينة، نقوم بتقطيعها إلى كرات متوسطة الحجم، ونفرد كل كرة على سطح مغطى بالزيت.

Place an appropriate amount of filling in the center of the dough, then seal the edges tightly.

نضع كمية مناسبة من الحشوة في وسط العجينة، ثم نقوم بإغلاق الأطراف بإحكام.

Allow the stuffed dough pieces to rise again for a quarter of an hour.

نترك قطع العجينة المحشوة لتختمر مرة ثانية لمدة ربع ساعة.

Gently roll out the filled dough from the center toward the edges

نقوم بفرد العجينة المحشوة برفق من المنتصف نحو الأطراف

Place in an oven preheated to 200 degrees Celsius and bake for 10 to 12 minutes until golden brown.

نقوم بوضعها في فرن مُسخن مسبقاً على حرارة 200 درجة مئوية، ونخبزها لمدة 10 إلى 12 دقيقة حتى تكتسب لوناً ذهبياً شهياً.
