Steps

    Grill the zucchini, bell pepper, and cherry tomatoes in the oven or on a grill until they soften and get slightly charred.

    Once slightly cooled, chop the grilled vegetables into medium-sized pieces.

    In a large bowl, mix the cooked quinoa and barley groats with the chopped grilled vegetables.

    Add the finely chopped parsley and cubed feta or Bulgareit cheese.

    Prepare the dressing by mixing lemon juice with Dijon mustard, honey, olive oil, and salt until smooth and combined.
