Steps

    In a food processor, blend the parsley, onion, and tomato until smooth.

    Mix the blended mixture with ground lamb, olive oil, salt, and black pepper until well combined.

    Divide the mixture into 8 equal portions and shape them into kebabs. If using wooden skewers, soak them in water for 30 minutes before use.

    Cut the pumpkin, zucchini, red pepper into cubes and the onion into slices according to the amounts mentioned, then place them in a microwave-safe bowl.

    Add a tablespoon of olive oil, red pepper flakes, thyme mixture, half a teaspoon of salt, and half a teaspoon of black pepper to the vegetables, and mix well.

    We set the microwave to “Combination Setting 3” to cook the seasoned vegetables and heat them for about 12 minutes (adjusting the time based on the size of the vegetable pieces).

    We place the kebabs on the metal rack provided with the microwave and set the microwave to “Combination Setting 2” to cook the kebabs for about 10 minutes until they are fully cooked.

    We serve the kebabs and vegetables with whole wheat pita bread as a balanced and satisfying meal.
