Begin by slicing the beef (or buff steak) into thin horizontal strips

Marinate the meat with grated onion, 1 tablespoon of tahini, 1 tablespoon of vinegar, 1 tablespoon of oil, 1 tablespoon of shawarma seasoning, and 1 tablespoon of yogurt. Mix well to ensure the meat is coated evenly in the marinade.

Don’t forget to add salt to the marinade for extra flavor.

Let the meat marinate for a short while to absorb the flavors.

In half a cup of tahini, add lemon juice, the same spices used for the marinade, and gradually add water while stirring until the sauce reaches the desired consistency.

Chop tomatoes, onions, and parsley. Add a little oil, the same spices, and a pinch of salt. Mix everything well with the sauce

Skewer the meat by alternating pieces of lamb fat (optional) with the meat. Add slices of tomato and onion between the layers of meat for extra flavor.

You can cook the skewers in a pan or an oven, but if you prefer using an air fryer, cook them for 15 to 20 minutes
