Heat the butter and olive oil in a pot over medium heat

Add the sliced onions and sauté

Add salt, black pepper, and nutmeg, stir well, and let it sit for 5 minutes until the onions are wilted and reach the consistency shown in the video

Add the flour and stir with the onions until it gains a light color.

Gradually add the beef broth while stirring continuously until well combined.

Leave the mixture on the fire for 20 minutes until it is fully cooked and then chop it with a hand blender

Pour the soup into oven-safe bowls, then place toasted bread or baguette slices on top.

Sprinkle Emmental cheese over the bread, then add butter and dried thyme.
