Steps

    Cut the pumpkin as shown in the video, then fry it in vegetable oil until it turns light brown, and place it in a strainer.

    In a pressure cooker, add ghee, then add the onion, cardamom, whole black pepper, bay leaf, and cloves, followed by the meat and water. Pressure cook for 15 minutes.

    To prepare the tahini sauce, mix 1 cup of tahini with 1 cup of water, pomegranate molasses, lemon juice, and salt, then stir well.

    Strain the meat and place it in the pot, then add the fried pumpkin and a little of the meat broth. Cover for 5 minutes to let the flavors combine.

    Add salt and the tahini sauce, and let it boil for 12 minutes.
