In a pot over the heat, we heat two tablespoons of ghee, add the whole spices, and sauté for a minute until the aroma is released. Then, we add the meat pieces with salt and sauté until the meat changes color.

Add the onions, garlic, and ginger, and sauté for a minute. Then, add the bell peppers, potatoes, tomatoes, parsley, and coriander, and mix well.

Next, add all the spices and the head of garlic, then pour in 3 cups of hot water mixed with saffron.

We cover the pot and let it simmer on low heat for 30 to 40 minutes until the meat is cooked through.

Then, add the rice, salt, a cup of hot water, and a tablespoon of ghee. Cover the pot and let it cook on low heat until the rice is done.
