Ingredients

  • 0.5CupHoney
  • 0.5Teaspoons (tsp)Baking soda
  • 2Psc.eggs
  • 3CupFlour
  • 10Tablespoons (tbsp)Baking powder

Steps

    Place 1 cup of oil, ½ cup of sugar, and ½ cup of natural honey in a pot over medium heat, and stir continuously with a whisk until the sugar completely dissolves, the mixture starts boiling, and its color darkens slightly.

    Add ½ teaspoon of baking soda to the mixture and continue stirring well until the mixture starts to rise and turns a light golden color, then remove it from the heat immediately to prevent the honey from burning.

    Pour the hot mixture into a deep bowl and let it cool for about 5–7 minutes, as adding eggs to a hot mixture may cause them to curdle.

    Once the mixture is warm, add the two eggs one at a time, whisking continuously with an electric mixer until you get a smooth, fully combined mixture.

    Mix the flour with the baking powder in advance, then gradually add it to the honey and egg mixture in three batches, stirring continuously until you get a thick and firm batter.

    After adding all the flour, knead the dough by hand for a few minutes until it becomes smooth and fully combined; it will be slightly thicker than regular cake batter.

    Prepare a Pyrex cake pan by greasing it well with butter on all sides, then place a sheet of parchment paper at the bottom to prevent the cake from sticking while baking.

    Pour the cake batter into the pan and spread it evenly with your hand lightly greased with oil so that the surface is level.

    Prick the surface of the cake several times with a fork to prevent it from puffing up during baking and to allow steam to escape evenly.

    Preheat the oven to 175–180°C (350–356°F), place the pan in the middle rack, and bake the cake for 25–30 minutes until the top is golden and the inside is fully cooked.

    Remove the cake from the oven and let it cool completely, then cut off the outer edges and grind them in a blender or grater to get fine crumbs for later decoration.

    Brush the top of the cake with a little honey to create a glossy layer, then sprinkle the ground edges and some crushed biscuits on top for color, slice the cake, and it is ready to serve.
