We wash the pumpkin thoroughly, peel it, and cut it into small pieces. Then, we place it in the air fryer for 15 minutes at a high temperature. After that, we take the pumpkin out of the air fryer while it's still hot, put it in the blender, add 4 tablespoons of water, and blend it well until we get a smooth puree.

In a bowl, we mix the flour with white sugar, baking powder, baking soda, cinnamon, ginger, and salt, then sift them together

In another bowl, we beat the eggs with brown sugar and vanilla until the mixture is smooth.

We add the pumpkin puree and oil gradually to the egg and brown sugar mixture and mix well.

We gradually add the dry ingredients (flour and white sugar) to the wet mixture and add the walnuts, stirring continuously until we get a smooth and homogeneous batter.

We pour the batter into a greased or lined cake pan, then place it in a preheated oven at 180°C (350°F) for 40-45 minutes or until a toothpick comes out clean from the cake.
