Grease a 24 cm (10-inch) baking dish with butter, then dust with flour and tap out the excess.

Spread the cherries evenly in the dish.

Crack the 4 eggs into a mixing bowl.

Add the vanilla extract, milk, and heavy cream to the eggs.

Whisk the mixture well using a hand whisk.

Zest a lemon and combine it with the sugar.

Rub the lemon zest into the sugar with your fingers to release the oils.

Add the lemon-sugar mixture to the wet ingredients and whisk until smooth.

Add the flour and salt, and whisk until fully incorporated.

Pour the batter over the cherries in the baking dish.

Bake in a preheated oven at 170–180°C (340–355°F) for 40–45 minutes, or until golden and set.
