    We knead the meat: We place the meat in a bowl and add salt, pepper, and spices. Then we add the onion, garlic, parsley, olive oil, and mint. We knead the mixture by hand for 10 minutes until it becomes smooth and the fibers appear.

    We shape the kebabs as shown in the video, then grill them over high heat to prevent them from releasing juices, allowing them to brown on top before removing them from the heat.
