Steps

    We make small cuts in the olives using a knife and place them in a bowl filled with water.

    We change the water twice a day for six days to remove the bitterness.

    After six days, we drain the olives well from the water.

    We add a suitable amount of coarse salt to the olives and mix well.

    We leave the olives with the salt overnight to draw out any remaining bitterness.

    The next day, we discard the liquid that has formed and wash the olives thoroughly with water.

    We soak the olives in water for one to two hours.

    We taste the olives to check if the salt level is suitable.

    We add slices of lemon.

    If we like it spicy, we add chopped green chili.

    We place the olives in a sterilized glass jar.
