Heat the butter and olive oil in a skillet over medium heat, then add the chopped onion and saute until it wilts.

Coarsely chop the mushrooms

Add the chopped mushrooms along with the salt, black pepper, paprika, and Italian seasoning, and stir until the liquid has completely evaporated.

Add the ricotta cheese to the mushroom mixture, stir until well combined, then allow to cool.

Cut the puff pastry into squares, then hollow out a small portion of the center of each piece to form a frame.

Gently fold the edges to create a hollow rim, then brush the top with beaten egg to ensure a golden color.

Sprinkle sesame seeds, sumac and thyme on all the squares as shown in the video to add a rich flavor.

We grill the falafel in the air fryer

For the first filling: Spread an appropriate amount of labneh in the center of some of the squares, then top with grilled falafel pieces

Second filling: Add cold mushroom mixture

The third filling Mix the cottage cheese with two tablespoons of ricotta cheese and then spread them on the dough with a sprinkle of thyme on the edges.

Brush the rest of the squares with the egg, add the mushroom mixture, and sprinkle a few sesame seeds on top for extra crunch

Arrange the pies on a tray lined with parchment paper and bake in an oven
