Ingredients

  • 400Psc.Qamar Al-Din
  • 4CupBoiling Water
  • 8CupSugar
  • 9Tablespoons (tbsp)Starch
  • 1CupMilk
  • 1CupThick cream
  • 2Tablespoons (tbsp)Blossom water
  • 2Teaspoons (tsp)Rose water
  • 6Teaspoons (tsp)Mastic
  • 1Tablespoons (tbsp)Pistachio
  • 1CupShredded coconut

Steps

    We cut 400 g of apricot paste (Qamar Al-Din) into small squares.

    We add 4 cups of boiling water and 3 tablespoons of sugar to the apricot paste.

    We dissolve 4 tablespoons of starch in a little cold water and then add it to the apricot paste mixture.

    We stir the mixture continuously over heat until it thickens.

    Pour the qamar al-din into serving cups and leave to set.

    We bring 1 liter of milk to a boil in a medium-sized pot.

    We dissolve 5 tablespoons of starch in a little cold milk and then add it to the boiling milk.

    We stir continuously until the mixture thickens and shows signs of boiling

    We add 1 can of cream (Qeimer), 2 tablespoons of orange blossom water, 2 tablespoons of rose water, and 6 crushed mastic seeds to the pudding.

    We pour the pudding over the set apricot paste layer.

    We decorate the cups with pistachios and shredded coconut as desired

    Tips: The amount of starch can be adjusted according to the desired consistency. Starch should be dissolved in cold water or milk before adding to avoid clumping. Make sure the apricot paste (Qamar Al-Din) layer is set before pouring the pudding on top. It is preferable to decorate with pistachios and shredded coconut just before serving.
