    Beat the eggs with vanilla and sugar until creamy.

    Add 2 cups of desiccated coconut and mix well.

    Check the consistency – if it's too soft, gradually add more coconut until thick and shapeable.

    Form into balls using your hands or a spoon and place them on a baking tray lined with parchment paper.

    Bake in a preheated oven at 180°C (middle rack) for about 15 minutes.

    Finally, turn on the top heat to brown the tops slightly if needed.

    Note Start with 2 cups coconut and add more as needed (I added an extra ⅓ cup).
