Ingredients

  • 1CupRed cabbage
  • 1CupQuinoa
  • 1CupShredded carrots
  • 0.5CupOlive oil
  • 1Tablespoons (tbsp)Apple vinegar
  • 1CupHoney
  • 0.25Psc.Lemon juice
  • 1To TasteBlack pepper
  • 1PinchSalt
  • 1PinchRed chili flakes
  • 0.25PacketPomegranate
  • 1Psc.Lemon zest
  • 1To TasteSalad spices

Steps

    Cut the purple cabbage into very thin slices.

    Boil quinoa in the same way as rice

  3. 3

    Grate the carrots.

  4. 4

    Mix the cabbage and carrots in a large bowl.

    To make the dressing, mix olive oil, salad dressing, honey, lemon juice, black pepper, salt, apple cider vinegar, and dried chili slices.

    Add the quinoa to the salad ingredients after it has cooled

    Add the dressing on top of the cabbage, quinoa and carrot mixture.

    Garnish with pomegranate and lemon zest.
