Ingredients

  • 4CupFlour
  • 1.5Grams (g) Instant yeast
  • 1CupSugar
  • 1PinchSalt
  • 3CupWarm water
  • 0.25CupOlive oil
  • 1PinchThyme
  • 1Tablespoons (tbsp)Coarse salt

Steps

    Combine all the ingredients in a bowl until a very sticky dough forms.

    Cover the dough with plastic wrap and let it rest for 10 minutes.

    Fold the dough over itself 4 to 6 times.

    Cover again and let it rest for another 10 minutes.

    Repeat the folding process once more.

    Cover the dough tightly and refrigerate it for 12 to 24 hours.

    Transfer the dough onto a greased baking tray.

    Cover and let it rest at room temperature for 1 to 2 hours, until puffy.

    Using oiled fingertips, make small dimples all over the surface of the dough.

    Add the topping and thyme or any preferred additions.

    Sprinkle a little coarse salt on top.

    Bake in a preheated oven at 220°C (428°F) on the lower rack for 25-30 minutes, until golden and crisp underneath.
