Fluffy Pancakes
Ingredients

- 4CupMilk
- 0.5Tablespoons (tbsp)Baking powder
- 1Teaspoons (tsp)Vanilla
- 4CupSugar
- 1CupMaple syrup

Separate the egg whites from the yolks into two separate bowls.

In the bowl with the yolks, mix together the flour, milk, vanilla, and baking powder until smooth.

In the second bowl, beat the egg whites with the sugar until stiff peaks form (a thick, fluffy meringue).

Gradually and gently fold the egg white mixture into the yolk mixture, taking care to preserve the airiness.

Heat a non-stick pan over very low heat, then pour a portion of the batter into the pan to form a thick pancake.

Sprinkle a few drops of water around the pancake in the pan, cover with a lid, and cook for 3 minutes.

Carefully flip the pancake, add a few more drops of water, cover again, and cook for another 3 minutes until fully cooked through.
