Chicken Roll Fatteh

We season the deboned chicken with salt and pepper

We spread butter mixed with minced garlic and a pinch of cardamom over the chicken.

We roll the chicken tightly and tie it with cooking string

We sear the chicken roll in a spoonful of ghee until it changes color.

We add the carrot, onion, and celery, then cover everything with warm water.

We cover the pot and let it cook for 30 minutes.

We use the broth to cook the rice.

In a pan, we sauté the minced garlic and hot pepper until they turn golden

We season with salt, pepper, cumin, and coriander.

We add the vinegar and stir.

We take a large spoonful of this mixture and mix it with ½ cup of broth to soak the bread.

We add the tomato paste and stir well.

Add the juice of 5 tomatoes and ½ cup soup and bring to a simmer.

Once the chicken has cooled, we slice it and fry the slices on both sides.

To serve: we layer toasted bread with the garlic-broth mixture, followed by rice, a bit of garlic sauce, tomato sauce, and the fried chicken slices on top.
