We wash the potatoes well to remove any dirt

We cut each potato in half, or into four pieces if they are large.

We boil water in a pot on the stove.

We add the potatoes, whole garlic cloves, salt, black pepper, and oregano to the boiling water and let them cook until tender.

While the potatoes are boiling, we prepare the marinade in a small bowl by melting the butter, then adding the minced garlic, salt, black pepper, red pepper, and oil, and mixing well.

We brush half of the marinade onto a baking dish.

We drain the potatoes and arrange them in the dish with the skin side facing up.

We generously brush the remaining marinade over the potatoes using a brush.

We place the tray in a preheated oven at 180°C (356°F) for 30 minutes.

We remove the tray from the oven and sprinkle chopped parsley over the potatoes.

We return the tray to the oven until the potatoes are golden and crispy on top.
