Ingredients

  • 2Psc.Eggplant
  • 4ClovesGarlic
  • 20BunchParsley
  • 2PinchSalt
  • 1PinchRed chili flakes
  • 30CupOlive oil

Steps

    Chop parsley and garlic.

    Add olive oil, salt, pepper and chili flakes.

    Give the eggplants an olive oil spa treatment.

  4. 4

    Place eggplants into oven at 150°C for 30 minutes.

  5. 5

    Flip eggplants over and add olive oil and salt.

  6. 6

    Place back into oven for 30 to 45 minutes at 150°C or until golden and softened.

  7. 7

    Brush marinade onto eggplants.
