    Gradually add sugar in 4 portions, along with a pinch of salt, while continuously beating. Beat until the mixture is glossy and forms stiff peaks (does not fall when turned upside down).

    Add vanilla and food coloring if desired, and gently mix.

    Pipe the mixture into desired shapes on a parchment-lined baking sheet.

    Bake at a low temperature (90-100°C / 194-212°F) for 60-90 minutes until dry and crisp.
