Peel the apples and cut them into small cubes.

Place the butter in a pan over low heat, then add the apples and 1 teaspoon of cinnamon, and cook for 5 minutes until the apples soften slightly.

In another bowl, beat the sugar and eggs for 4–5 minutes until the mixture becomes light and fluffy.

Gradually add the oil while whisking until the mixture is well combined.

Add the cooked apples, flour, baking powder, salt, cinnamon, and lemon zest, then mix until smooth.
