Ingredients

- 2Tablespoons (tbsp)Sumac
- 1Psc.Chopped Onion
- 2.25Cupwater

Mix 6 cups of white flour with 1 tablespoon of salt

Gradually add the warm water to the flour and knead well until a smooth, elastic dough forms (it’s preferable for the dough to be a bit soft).

Add 1/4 cup of olive oil and knead again until the dough is well combined

Cover the dough and let it rest at room temperature for about 30 minutes to an hour.

To prepare the filling, wash 2 cups of fresh green zaatar and let it dry well

Mix the zaatar with 1 large finely chopped onion, 2-3 tablespoons of sumac, pepper, and salt to taste.

Rub the filling well, then add olive oil and adjust the salt and sumac if needed.

Divide the dough into small balls and let them rest for 10 minutes on an oiled tray.

Shape the pies in a spiral form as shown in the video.

Bake the pies in a preheated oven at 200°C (392°F) until they turn golden and crispy.

Brush the pies with a little olive oil right after taking them out of the oven, and serve. Enjoy!
