Steps

    Slice the potatoes into thin rounds.

    Toss them with a bit of olive oil, salt, and black pepper

    Bake them in the oven or air fryer until golden and crispy, or deep fry them if preferred.

    In a large bowl, mix together the olive oil, pomegranate molasses, lemon juice, red pepper paste, paprika, chili flakes, salt, and black pepper.

    Slice the onion and red pepper into slices

    Add the sliced red onion and red bell pepper to the dressing, and gently massage them by hand to soften.

    Add the chopped green onion, parsley, pickles, and crushed walnuts to the mixture and stir well.

    Finally, add the crispy potato slices and toss everything gently to combine.
