Cut your favorite vegetables (such as zucchini, red onions, and tomatoes) and mix them with garlic, Italian herbs, chili flakes, salt, pepper, and olive oil. Roast in the oven until tender and flavorful

Heat olive oil in a pan over medium heat, add the minced garlic, and fry until softened. Pour in the tomatoes and use a fork to crush them down slightly.
