Ingredients

  • 1CanArtichoke
  • 2Psc.Green onion
  • 1To TasteMint
  • 0.5CupEgyptian rice
  • 1PinchSalt
  • 1To TasteBlack pepper
  • 2Psc.lemon
  • 2CupOlive oil

Steps

    Wash the Egyptian rice and soak it for 10 minutes.

    Chop the green onions and mint leaves.

    In a bowl, mix the rice with green onion and mint, then add salt, black pepper, olive oil, and lemon juice. Stir well

    Prepare the artichokes:

    Remove the stem.

    Peel off the tough outer leaves and rub with lemon.

    Cut off the top of the artichoke.

    Trim the tips of the leaves with scissors.

    Use a spoon to remove the inner choke (the fuzzy part).

    Wash thoroughly, and rub again with lemon to prevent browning

    Place the stem and peeled leaves in the bottom of the cooking pot after washing them.

    Arrange the artichokes on top and stuff each one with the rice mixture.

    Drizzle extra lemon juice on top, place a small plate over them to hold them in place

    Add enough water to just cover the bottom of the pot. Cover with a lid

    Cook over medium to low heat until the rice is cooked and the artichokes are tender.

    Serve warm or at room temperature
