We make the caramel sauce by melting 100 g of sugar in a saucepan over low heat until it turns golden, then we add 50 g of butter and stir until melted, followed by 50 ml of whipping cream, stirring continuously until the sauce becomes smooth and well combined.

نقوم بتحضير صوص الكراميل بإذابة 100 جم سكر في قدر على نار هادئة حتى يتحول إلى لون ذهبي، ثم نضيف 50 جم زبدة ونقلب حتى تذوب تماماً، وبعدها نضيف 50 مل كريمة خفق ونستمر بالتحريك حتى نحصل على صوص ناعم ومتجانس.

We assemble the dessert in cups or serving dishes by layering cheesecake cream, peaches, crumble, and caramel sauce, repeating the layers as desired.

نقوم بتجميع الطبقات في أكواب أو أطباق التقديم، فنضع طبقة من الكريمة، تليها طبقة من الخوخ، ثم طبقة من الكرامبل، ثم صوص الكراميل، ويمكن تكرار الطبقات حسب الرغبة.

We refrigerate the cups for at least 3 hours until the layers are well set before serving.

Chop all the tabbouleh ingredients, chop the walnuts, and peel the pomegranate to extract the seeds.

Mix all the tabbouleh ingredients in a large bowl.

We place the flour, water, salt, and yeast in a large bowl, and we gently mix them together just until combined, without heavy kneading, forming a soft, slightly sticky dough.

نضع الطحين والماء والملح والخميرة في وعاء كبير، ونخلط المكوّنات معاً خلطاً بسيطاً حتى تتداخل فقط من غير عجن قوي، فيتكوّن لدينا عجين طري ولزج نسبياً.

We cover the bowl well and let the dough rise at room temperature for 4–5 hours until it puffs up and increases in volume.

نغطي الوعاء جيداً، ونترك العجين ليختمر في درجة حرارة الغرفة لمدة 4–5 ساعات حتى ينتفخ العجين ويزداد حجمه.

We stretch the edges of the dough from the sides toward the center 2–3 times to tighten the surface slightly.

نمدّ أطراف العجين من الجوانب نحو الوسط عدّة مرات (2–3 مرات تكفي) حتى نحصل على سطح أكثر تماسكاً.

We transfer the dough to another lidded container, close it, and place it in the fridge to cold-ferment overnight, making it ready for baking the next day.

ننقل العجين إلى وعاء آخر له غطاء، ونغلقه، ثم نضعه في الثلّاجة ليتخمّر على البارد طوال الليل، فيصبح جاهزاً للخبز في اليوم التالي.

We take the dough out of the fridge and turn it directly onto a floured baking tray.

نخرج العجين من الثلّاجة، ونقلبه مباشرة على صينية خبز مرشوشة بالطحين.

We dust the top of the dough with flour as well, then gently shape and even out the edges to form a rough rectangle or even slab.

نرش سطح العجين بالطحين أيضاً، ثم نحاول تسوية الأطراف بلطف حتى نحصل على شكل مستطيل أو شكل متساوٍ تقريباً.

We flour the dough cutter or knife to prevent sticking, then cut the dough into pieces suitable for the desired sandwich size.

نرش قطّاعة العجين أو السكين بالطحين حتى لا تلتصق، ثم نقطّع العجين إلى قطع مناسبة لحجم الساندويتشات الذي نريده.

We carefully separate the pieces on the tray, using a little extra flour on the surface if needed to handle the dough more easily.

نباعد بين القطع بحذر على الصينية، ويمكن أن نرش قليلاً من الطحين على السطح لتسهيل التعامل مع العجين.

We let the dough pieces rest at room temperature for about 45–60 minutes so they relax and puff up slightly before baking.

نترك قطع العجين في درجة حرارة الغرفة لمدة 45–60 دقيقة تقريباً حتى تسترخي وتنتفخ قليلاً قبل الخَبز.

We preheat the oven to 220°C and place a baking tray with water at the bottom of the oven to create steam.

If desired, we sprinkle sesame seeds over the dough pieces before placing them in the oven.
