  • 2CupFlour
  • 2Tablespoons (tbsp)Starch
  • 2Grams (g) Butter
  • 1Psc.Yolk
  • 1Teaspoons (tsp)Vanilla

Steps

    In a cold pot, whisk together milk, cream, flour, starch, sugar, egg yolk, and vanilla until smooth.

    Heat the mixture over medium heat while stirring until it thickens. Add a splash of water if needed.

    In a pan over medium heat, caramelize the powdered sugar until it melts and turns golden.

    Add one ladle of the pudding to the caramel and stir to combine.

    Gently pour in the rest of the pudding and leave it to cook for 5–7 minutes on low heat without stirring.

    Turn off the heat, cover the pan, and let it cool for 20 minutes.

    Refrigerate for at least 2 hours.

    Cut into squares or roll into logs.

    Serve garnished with crushed pistachios.
