Ingredients

- 85Milliliters (mL)Melted butter
- 1.5CupWhipping cream
- 350Tablespoons (tbsp)Cream cheese
- 2CupLotus Butter
- 2CupPowdered sugar

Crush the Lotus biscuits in a food processor until fine, then mix with the melted butter until the crumbs are well coated.

Line the base of the pan with baking paper and lightly grease the sides, then press the biscuit mixture firmly into the base to form an even crust and chill in the fridge.

Whip the cream until thick and stiff, then keep it in the fridge.

In a mixing bowl, beat the cream cheese, Lotus spread, and powdered sugar together until smooth and creamy.

Gently fold the whipped cream into the cream cheese mixture in batches using a spatula until well combined and fluffy.

Pour the cheesecake mixture over the biscuit base, smooth the top, and refrigerate for at least 4–5 hours or overnight until set.

Warm the remaining Lotus spread slightly in the microwave until pourable, let it cool for 2 minutes, then pour over the chilled cheesecake and spread gently.

Decorate the top with crushed Lotus biscuits and whipped cream rosettes, chill again until serving time, then slice and serve.
