Ingredients

We put 3 tablespoons of vegetable oil in a pot, then add 1 finely chopped onion with a pinch of salt and stir until the onion turns golden.

We add 2 cups of mung beans soaked for 15 minutes to the onion and stir well.

We add 1.5 liters of water to the mung beans, then cover the pot and leave it over medium heat for 45 minutes until the mung beans are cooked.

After the mung beans are cooked, we blend them with a hand blender while keeping some texture.

We return the soup to the heat and add 1 teaspoon of salt, 1/2 teaspoon of turmeric, 1/2 teaspoon of cumin, and 1 cup of vermicelli, then leave it over low heat for about 10 minutes until the vermicelli is cooked.

In a pan, we heat 1/4 cup of oil, then add 1 onion cut into slices and fry until golden brown.

We add the fried onion to the soup and stir for an additional 5 minutes.

We pour the soup into serving bowls and garnish with the fried onion.
