  • 3Tablespoons (tbsp)Buttermilk
  • 0.25Tablespoons (tbsp)Vinegar
  • 1.5PinchSalt
  • 0.75Tablespoons (tbsp)Mahleb
  • 1.5PinchThyme
  • 1.5Teaspoons (tsp)Paprika
  • 0.25PinchHot chilli powder
  • 1CupOlive oil

    Pour the yoghurt into a pot.

    Add white vinegar to the pot.

    Bring the mixture to a boil.

    Remove from heat and filter using cheese cloth.

    Squeeze to extract excess liquid.

    Place a weight over it and refrigerate for at least 4 hours.

    Transfer the cheese to a bowl.

    Add salt, mahalep, zaatar, paprika, and hot chili. Mix thoroughly.

    Shape the mixture into firm balls.

    Place the cheese balls on a clean kitchen towel.

    Leave them for 36 hours in a cool, dry place.

    Dip each cheese ball in olive oil.

    Roll the balls in zaatar to coat completely.
