Ingredients

- 0.25Tablespoons (tbsp)Vinegar

- 0.75Tablespoons (tbsp)Mahleb
- 1.5PinchThyme
- 1.5Teaspoons (tsp)Paprika
- 0.25PinchHot chilli powder
- 1CupOlive oil

Pour the yoghurt into a pot.

Add white vinegar to the pot.

Bring the mixture to a boil.

Remove from heat and filter using cheese cloth.

Squeeze to extract excess liquid.

Place a weight over it and refrigerate for at least 4 hours.

Transfer the cheese to a bowl.

Add salt, mahalep, zaatar, paprika, and hot chili. Mix thoroughly.

Shape the mixture into firm balls.

Place the cheese balls on a clean kitchen towel.

Leave them for 36 hours in a cool, dry place.

Dip each cheese ball in olive oil.

Roll the balls in zaatar to coat completely.
