We sprinkle salt on the eggplant slices and leave them until they release their moisture

We dry the slices well, lightly brush them with oil, and place them in the air fryer until they are cooked and softened.

We mix the minced meat with parsley, mashed onion, black pepper, mixed spices, and salt until well combined.

We shape the meat into finger-like pieces, place them on a baking sheet lined with parchment paper, and cook them in the air fryer until fully done

We place the kofta fingers on the eggplant slices, then roll them up as shown in the video

We prepare the sauce by sautéing the garlic in olive oil

We add tomato juice to the garlic, then season with salt, sugar, and black pepper

We arrange the eggplant rolls in a baking dish and pour the sauce over them.

We bake them in a preheated oven at 180°C for 15 to 20 minutes until fully cooked.

We take them out of the oven, sprinkle some mozzarella cheese on top, and return them until the cheese melts. Then, we serve them
