Ingredients

  • 4CupFlour
  • 3Tablespoons (tbsp)Vegetable oil
  • 0.25PinchSalt
  • 3CupSugar
  • 1Grams (g) Instant yeast
  • 1.25CupWarm water
  • 0.5CupOlive oil
  • 2Tablespoons (tbsp)Roasted sesame
  • 0.5To TasteMozzarella
  • 0.5Grams (g) Halloumi cheese
  • 0.5Teaspoons (tsp)Dried Thymus

Steps

  1. 1

In a small bowl, we mix ¼ cup of warm water with the yeast and sugar, stir, cover, and let it sit until the yeast activates and becomes foamy

  2. 2

In a separate bowl, we place the flour, salt, toasted sesame seeds, and vegetable oil, then add the activated yeast mixture

  3. 3

Gradually knead while adding warm water as needed until a soft, cohesive dough forms.

  4. 4

Wipe the surface of the dough with a tablespoon of olive oil, cover it and leave it to rise in a warm place

  5. 5

After rising, we divide the dough into small balls and roll each ball into a medium-sized flat round shape.

  6. 6

We preheat a non-stick pan over medium heat and place one dough circle into the pan.

  7. 7

To prepare the filling: Mix the thyme with olive oil

  8. 8

Once the bottom side starts to brown, we flip the dough and immediately add the filling (zaatar or cheese) on the cooked side.

  9. 9

We cover the pan briefly to help melt the cheese, then remove the manakish from the pan and repeat with the remaining dough.

  10. 10

    We serve the manakish hot
