  • 100CupSugar
  • 550CupWhipping cream
  • 1Tablespoons (tbsp)Orange Zest
  • 1PinchSalt
  • 1Psc.Cranberry

Steps

    We heat the cream with half of the sugar without letting it boil.

    We separate the egg yolks and place them in a bowl with the vanilla, remaining sugar, and orange zest, then whisk until the color lightens.

    We gradually pour the hot cream over the yolk mixture while stirring, then strain it through a fine sieve.

    We pour the mixture into ceramic ramekins placed in a baking tray, then add boiling water to reach halfway up the ramekins.

    We bake the ramekins until the centers are set with a slight jiggle, then cool them and refrigerate for several hours.

    We sprinkle sugar on top and caramelize it with a torch or broiler until golden.
