Heat the oil in a pot over medium heat.

Add the chopped onion and sauté until soft.

Once the onion softens, add the garlic and ginger and stir well until fragrant.

Add the tomato paste and chopped tomato and mix well.

Add the spices: bay leaves, loomi, fish spice, dried coriander, cumin, black pepper, cinnamon, and salt, then mix all ingredients together.

Add the tuna and the soaked, washed rice. Use one can of tuna for each cup of rice.

Pour hot water over the rice and adjust the salt to taste.

Bring the rice to a boil so it absorbs the water.

Cover the pot and let it simmer on low heat until the rice is fully cooked.

Transfer the kabsa to a serving dish.
