    Start by rubbing the butter with 200 grams of flour (fine flour with wheat germ) until well combined.

    Add 50 grams of water to the mixture and knead until a cohesive dough forms.

    Place the dough in the fridge for a short time to make it easier to shape later.

    Prepare the filling by mixing 150 grams of date paste with ghee until the mixture is smooth.

    Preheat the oven to 210°C (410°F) using only the bottom heat.

    Shape the dough into balls, then fill them with the mixture and seal them properly.

    Place the maamoul in the bottom rack of the oven for 10 minutes until browned from the bottom.

    Then, switch on the top heat and fan for 5 minutes to brown the top nicely

    Important Tips: Avoid using the top heat for a long time to prevent the dates from drying out. This recipe yields approximately 18-20 pieces, with each piece weighing 18 grams for the dough and 9 grams for the filling. Enjoy your maamoul!
