Steps

    We boil the shell pasta according to the instructions on the package, then drain and place them in ice water so they cool down and are easier to stuff.

    In a bowl, we prepare the filling: we mix the ricotta cheese, shredded cheddar, egg, chopped basil, lemon zest, garlic powder, and seasonings until well combined.

    We fill each pasta shell with the cheese mixture using a spoon or a piping bag, as preferred.

    In a baking dish, we pour in the diced tomatoes and season them with salt, pepper, garlic powder, and seasoning mix, then stir to combine.

    We arrange the stuffed pasta shells over the tomato sauce in the baking dish.

    We grate Manchego or Parmesan cheese on top of the pasta.

    We bake the dish in a preheated oven at 200–220°C (392–428°F) for 20 to 25 minutes until the cheese is golden and the filling is set.
