Steps

    Heat some olive oil in a pan over medium heat.

    Add the chicken liver and let it cook for 5 minutes without stirring.

    After 5 minutes, gently flip the liver and allow it to brown on the other side.

    Add more olive oil, then add the sliced onion and sauté until softened.

    Add the minced garlic and stir until fragrant.

    Add the sliced chili peppers and mix well.

    Return the liver to the pan, then add cumin, dried coriander, ground ginger, black pepper, and salt.

    Prepare the tahini sauce Combine the tahini, yogurt, crushed garlic, lemon juice, sumac, and salt in a bowl.
