  • 1CupCoconut milk
  • 1Cupwater
  • 2Teaspoons (tsp)Curry powder
  • 2Psc.Minced garlic cloves
  • 1Teaspoons (tsp)Minced ginger

    Cut the crab in half and clean thoroughly.

    Heat a small amount of oil in a deep skillet over medium heat.

    Add onion, bell peppers, coriander, cumin, and fennel; sauté until softened.

    Add minced garlic and sauté for a minute.

    Add crab pieces to the skillet and gently stir.

    Season with salt, pepper, and paprika.

    Dissolve curry powder in 1 cup of water and add to the skillet. Stir the mixture and let it cook over medium heat for 10 minutes.

    Add coconut milk or cooking cream. (Or 1 cup grated coconut soaked in 2 cups hot water and strained)

    Cover the skillet and let it simmer for 5 minutes. Serve the crab curry hot with white rice and a squeeze of lemon.
