- 1Tablespoons (tbsp)Pizza sauce
- 6CupPepperoni
- 1Tablespoons (tbsp)Seedless black olives
- 1To TasteMozzarella

Mix all the ingredients in a large bowl using a spoon, just until combined—no kneading needed.

Cover the dough and let it rise at room temperature for 4 to 5 hours.

During the rise, stretch the edges of the dough and fold them toward the center 2 to 3 times

After rising, transfer the dough to a covered container and refrigerate it for cold fermentation. It can be stored for 3 to 4 days in the fridge.

When ready to use, divide the dough into balls and let them rest for at least 30 minutes at room temperature.

Dust some flour or fine semolina to help shape the dough, then gently spread each dough ball by hand.

Add your preferred pizza sauce and toppings.

Bake the pizza on the hot oven floor at the highest available temperature, preferably adding the cheese 5 minutes before the pizza is done for a perfect result

A pizza oven is preferred, but a regular home oven works well too if it's hot enough.
