We place four cups of cold full-fat milk in a pan.

We add one cup of medium semolina and half a cup of sugar, adjusting sweetness if desired.

We add the ground mastic mixed with one teaspoon of sugar and half a teaspoon of vanilla.

We mix all the ingredients well while cold until fully combined.

We place the pan over medium heat, stirring constantly until the mixture boils and thickens.

We lightly grease the serving dish with a bit of sugar syrup to make it easier to remove the dessert later.

We pour the hot mixture into the serving dish immediately after cooking.

We smooth the surface with a spoon dipped in water until it’s even and flat.

We let the dessert cool at room temperature without refrigerating it yet.

We slightly warm the cream in the microwave to make it easier to spread, then evenly spread it over the surface.
