Steps

    Remove the side strings from the small green fava bean pods and cut them into medium pieces.

    Shell the large, tough beans, keeping only the inner seed and discarding the pods.

    Wash all the beans thoroughly and drain them.

    In a pot over heat, add the olive oil, then the fava beans, salt, pepper, and sugar.

    Sauté over high heat for a few minutes, then lower the heat to just below medium, cover, and let them cook for 20 minutes until tender.

    Once the beans are cooked, add chopped cilantro and crushed garlic.

    Stir a few times until fragrant, then turn off the heat.

    Serve the dish with fresh vegetables, pickles, and a side of yogurt.
