    Boil the eggs until hard-boiled (about 8-10 minutes), then peel and slice them.

    In a bowl, mash the avocado and mix with Greek yogurt, lime juice, chopped parsley, salt, and black pepper until smooth. For the avocado sauce: - 1/2 can Greek yogurt - 1 avocado - 1/2 lime or lemon juice - 1/4 bunch fresh parsley - Salt - Black pepper

    On a slice of bread, layer the boiled egg slices, lettuce, arugula, red bell pepper, and drizzle the avocado sauce on top. Cover with another slice of bread.
